Asian Cottage Pies

Here’s a kid-friendly Asian-inspired cottage pie recipe:

Ingredients:

  • 1 lb ground chicken or turkey
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated
  • 1 cup chicken broth
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground chicken or turkey over medium heat until browned. Add the onion, garlic, and ginger, and cook until the onion is soft.
  3. Stir in the mixed vegetables, soy sauce, oyster sauce, sesame oil, and chicken broth. Simmer for 5-7 minutes until the vegetables are tender and the liquid has reduced.
  4. Season with salt and pepper to taste.
  5. Transfer the chicken and vegetable mixture to a baking dish.
  6. Spread the mashed potatoes over the top of the chicken mixture, covering it completely.
  7. Sprinkle the shredded cheddar cheese over the mashed potatoes.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions before serving.
