Asian Cottage Pies
Here’s a kid-friendly Asian-inspired cottage pie recipe:
Ingredients:
- 1 lb ground chicken or turkey
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon ginger, grated
- 1 cup chicken broth
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground chicken or turkey over medium heat until browned. Add the onion, garlic, and ginger, and cook until the onion is soft.
- Stir in the mixed vegetables, soy sauce, oyster sauce, sesame oil, and chicken broth. Simmer for 5-7 minutes until the vegetables are tender and the liquid has reduced.
- Season with salt and pepper to taste.
- Transfer the chicken and vegetable mixture to a baking dish.
- Spread the mashed potatoes over the top of the chicken mixture, covering it completely.
- Sprinkle the shredded cheddar cheese over the mashed potatoes.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
