Asian Chicken Chow Mein

Here’s a kid-friendly recipe for chicken chow mein:

Ingredients:

  • 8 oz chow mein noodles
  • 1 lb boneless, skinless chicken breasts, cut into small pieces
  • 2 cups mixed vegetables (such as bell peppers, carrots, and snap peas)
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Optional: sliced green onions for garnish

Instructions:

  1. Cook the chow mein noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, and sesame oil to make the sauce. Set aside.
  3. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chicken pieces and cook until they are no longer pink in the middle.
  4. Add the minced garlic and mixed vegetables to the pan. Stir-fry for a few minutes until the vegetables are tender-crisp.
  5. Add the cooked chow mein noodles to the pan, followed by the prepared sauce. Toss everything together until the noodles and chicken are coated in the sauce.
  6. Season with salt and pepper to taste.
  7. Optional: Garnish with sliced green onions before serving.
