Asian Chicken Soup Noodle
Here’s a kid-friendly recipe for Asian chicken soup noodle:
Ingredients:
- 8 cups chicken broth
- 2 boneless, skinless chicken breasts
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 4 oz rice noodles
- 1 cup sliced carrots
- 1 cup sliced bok choy
- Optional toppings: sliced green onions, chopped cilantro, and lime wedges
Instructions:
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts to the pot and let them cook for about 15-20 minutes, or until they are fully cooked.
- Remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot and add soy sauce, oyster sauce, sesame oil, grated ginger, and minced garlic. Let it simmer for 5 minutes.
- In a separate pot, cook the rice noodles according to the package instructions. Drain and set aside.
- Add the sliced carrots and bok choy to the soup and let them cook for 5-7 minutes, or until they are tender.
