Asian Chicken Soup Noodle

Here’s a kid-friendly recipe for Asian chicken soup noodle:

Ingredients:

  • 8 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 4 oz rice noodles
  • 1 cup sliced carrots
  • 1 cup sliced bok choy
  • Optional toppings: sliced green onions, chopped cilantro, and lime wedges

Instructions:

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breasts to the pot and let them cook for about 15-20 minutes, or until they are fully cooked.
  3. Remove the chicken from the pot and shred it using two forks.
  4. Return the shredded chicken to the pot and add soy sauce, oyster sauce, sesame oil, grated ginger, and minced garlic. Let it simmer for 5 minutes.
  5. In a separate pot, cook the rice noodles according to the package instructions. Drain and set aside.
  6. Add the sliced carrots and bok choy to the soup and let them cook for 5-7 minutes, or until they are tender.
  7. To serve, place a portion of cooked rice noodles in a bowl and ladle the chicken soup over the noodles.
  8. Garnish with sliced green onions, chopped cilantro, and a squeeze of lime juice if desired.
