Asian Chow Mein

Here’s a nutritious and kid-friendly Asian chow mein recipe:

Ingredients:

  • 8 oz chow mein noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 cup mixed vegetables (such as bell peppers, carrots, and snap peas)
  • 1 cup cooked and shredded chicken or tofu
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon sesame oil
  • 1/4 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Optional garnish: chopped green onions, sesame seeds

Instructions:

  1. Cook the chow mein noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sliced onion, and sauté until fragrant.
  3. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they start to soften.
  4. Push the vegetables to the side of the skillet and add the shredded chicken or tofu to the empty space. Cook for a few minutes until heated through.
  5. In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, sesame oil, and chicken or vegetable broth. Pour this sauce over the vegetable and chicken/tofu mixture in the skillet.
  6. Add the cooked chow mein noodles to the skillet and toss everything together until well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and sesame seeds if desired.
