Beef Rendang

Ingredients:
- 1 pound (450g) beef (such as chuck or stew meat), cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon curry powder (mild)
- 1 can (400ml) coconut milk
- 1 tablespoon brown sugar or honey
- 1 tablespoon soy sauce (low sodium)
- 1 carrot, sliced
- 1 bell pepper, chopped (any color)
- Salt to taste
- Cooked rice, for serving
Instructions:
- Prepare the Beef:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes soft and translucent.
- Add Aromatics:
- Stir in the minced garlic and ginger, cooking for another minute until fragrant.
- Brown the Beef:
- Add the beef pieces to the pot and cook until they are browned on all sides.
- Spice It Up:
- Sprinkle the curry powder over the beef and stir well to coat the meat evenly.
- Add Coconut Milk:
- Pour in the coconut milk, and add the brown sugar and soy sauce. Stir to combine everything.
