Beef Rendang

Here’s a kid-friendly recipe for Beef Rendang that simplifies the traditional dish while keeping it delicious and approachable for younger palates!

Ingredients:

  • 1 pound (450g) beef (such as chuck or stew meat), cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder (mild)
  • 1 can (400ml) coconut milk
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon soy sauce (low sodium)
  • 1 carrot, sliced
  • 1 bell pepper, chopped (any color)
  • Salt to taste
  • Cooked rice, for serving

Instructions:

  1. Prepare the Beef:
  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes soft and translucent.
  1. Add Aromatics:
  • Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  1. Brown the Beef:
  • Add the beef pieces to the pot and cook until they are browned on all sides.
  1. Spice It Up:
  • Sprinkle the curry powder over the beef and stir well to coat the meat evenly.
  1. Add Coconut Milk:
  • Pour in the coconut milk, and add the brown sugar and soy sauce. Stir to combine everything.
  1. Simmer:
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally.
  1. Add Vegetables:
  • About 30 minutes before serving, add the sliced carrot and chopped bell pepper to the pot. Stir well and continue to simmer.
  1. Season:
  • Taste the rendang and add salt if needed. If you want it a bit sweeter, you can add a little more brown sugar or honey.
  1. Serve:
  • Serve the Beef Rendang over cooked rice. You can garnish it with fresh cilantro if desired.

Tips:

  • You can adjust the level of spice by using less curry powder or opting for a milder blend.
  • Feel free to add other vegetables like peas or green beans for extra color and nutrition.
