Bibimbap

How about making Bibimbap for your child? It’s a nutritious and colorful Korean mixed rice dish that is kids friendly. Here’s a simple recipe for Bibimbap:

Ingredients:

  • 2 cups cooked white rice
  • 1 cup assorted vegetables (carrots, spinach, bean sprouts, mushrooms, and zucchini)
  • 1 cup protein (sliced beef, chicken, or tofu)
  • 4 eggs
  • 4 tablespoons gochujang (Korean red pepper paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Sesame seeds for garnish

Steps:

  1. Prepare the vegetables: Julienne or thinly slice the carrots, zucchini, and mushrooms. Blanch the spinach and bean sprouts in boiling water for a few seconds, then rinse with cold water and squeeze out excess moisture.
  2. Marinate the protein: If using sliced beef or chicken, marinate it with soy sauce, minced garlic, sesame oil, salt, and pepper. If using tofu, you can simply pan-fry it until golden.
  3. Fry the eggs: Fry four eggs sunny-side up or to your preferred doneness.
  4. Assemble the bibimbap: Divide the cooked rice among four bowls. Arrange the assorted vegetables and protein on top of the rice. Place a fried egg on top of each bowl.
  5. Serve with gochujang: Place a spoonful of gochujang on top of the bibimbap. You can adjust the amount to your spice preference.
  6. Mix it up: Before eating, mix all the ingredients together so that the rice, vegetables, protein, and egg are evenly coated with the gochujang.
  7. Garnish with sesame seeds and serve.
