Black Bean Chicken Burritos

Here’s a kid-friendly recipe for black bean chicken burritos:

Ingredients:
– 1 pound boneless, skinless chicken breasts, cut into small pieces
– 1 can (15 ounces) black beans, drained and rinsed
– 1 cup cooked rice
– 1 cup shredded cheddar cheese
– 1/2 cup salsa
– 1/4 cup chopped fresh cilantro
– 1 teaspoon ground cumin
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon paprika
– Salt and pepper to taste
– 4 large flour tortillas

Instructions:
1. In a large skillet, cook the chicken pieces over medium heat until no longer pink and fully cooked. Season with cumin, garlic powder, onion powder, paprika, salt, and pepper.

2. Add the black beans to the skillet and cook for a few minutes until heated through.

3. Warm the tortillas in the microwave for about 20 seconds to make them easier to roll.

4. Place a spoonful of cooked rice in the center of each tortilla, followed by the chicken and black bean mixture.

5. Sprinkle shredded cheese over the chicken and bean mixture, then add a spoonful of salsa and a sprinkle of chopped cilantro.

6. Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.

7. Serve the burritos with extra salsa and sour cream on the side if desired.
