Kid-Friendly
Ingredients:
– 2 cups fresh broccoli florets (or frozen broccoli)
– 1 cup carrots, diced
– 1 small onion, chopped
– 2 tablespoons butter
– 3 cups vegetable or chicken broth
– 1 cup milk (you can use whole milk or any milk alternative)
– 2 cups shredded cheddar cheese
– 1 teaspoon garlic powder (optional)
– Salt and pepper to taste
– Optional: Croutons for topping
Instructions:
1. Prepare the Vegetables:
– If using fresh broccoli, wash and cut it into small florets. Dice the carrots and chop the onion.
2. Sauté the Vegetables:
– In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes soft and translucent.
– Add the diced carrots and broccoli florets to the pot. Cook for another 5 minutes, stirring occasionally.
3. Add Broth:
– Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the vegetables are tender.
4. Blend the Soup:
– If you want a smoother texture, you can use an immersion blender to blend the soup directly in the pot. Alternatively, you can carefully transfer the soup to a blender in batches and blend until smooth. (Be cautious with hot liquids!)
5. Add Milk and Cheese:
– Return the blended soup to the pot (if you used a blender). Stir in the milk and heat the soup over low heat. Gradually add the shredded cheddar cheese, stirring until it’s melted and well combined.
6. Season:
– Add garlic powder (if using), and season with salt and pepper to taste.
7. Serve:
– Ladle the soup into bowls and top with croutons if desired. Enjoy your delicious and creamy broccoli cheddar soup!
Tips:
– You can add other veggies like cauliflower or potatoes for extra nutrition.
– For a fun twist, let the kids help sprinkle the cheese on top before serving!
Enjoy cooking with your little ones!
