Butter Chicken
Here’s a kid-friendly recipe for butter chicken:
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper (adjust to taste for kids)
- 1 can (14 oz) tomato sauce
- 1/2 cup heavy cream
- Salt and pepper to taste
- Cooked rice or naan bread for serving
Instructions:
- In a bowl, mix the yogurt with the cumin, coriander, paprika, turmeric, cinnamon, and cayenne pepper. Add the chicken pieces and stir to coat. Marinate for at least 30 minutes, or overnight in the refrigerator.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened. Add the garlic and ginger, and cook for another minute.
- Add the marinated chicken and cook until the chicken is no longer pink.
- Stir in the tomato sauce and simmer for 10 minutes, stirring occasionally.
- Stir in the heavy cream and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve the butter chicken over cooked rice or with naan bread.
