Caprese Pasta
Here’s a kid-friendly recipe for Caprese pasta:
Ingredients:
– 8 ounces of pasta (such as penne or fusilli)
– 1 cup cherry tomatoes, halved
– 1 cup fresh mozzarella, diced
– 1/4 cup fresh basil, chopped
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– Salt and pepper to taste
– Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
4. Add the cooked pasta to the skillet and toss to combine with the tomatoes and garlic.
5. Remove the skillet from the heat and add the diced mozzarella and chopped basil. Toss everything together until the mozzarella starts to melt slightly.
6. Season with salt and pepper to taste.
7. Serve the Caprese pasta in individual bowls and top with grated Parmesan cheese if desired.
