Chicken Broccoli Rice Casserole

Here’s a kid-friendly recipe for Chicken Broccoli Rice Casserole:

Ingredients:

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 2 cups steamed broccoli florets
  • 1 can condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed crackers (such as Ritz) for topping

Instructions:

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the cooked chicken, rice, and steamed broccoli.
  3. In a separate bowl, whisk together the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the soup mixture over the chicken, rice, and broccoli, and stir to combine.
  5. Stir in half of the shredded cheddar cheese.
  6. Transfer the mixture to the prepared baking dish and spread it out evenly.
  7. Sprinkle the remaining cheddar cheese over the top, and then sprinkle the crushed crackers on top of the cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the crackers are golden brown.
  9. Let it cool for a few minutes before serving.
