Chicken Empanadas
Here’s a kid-friendly recipe for Chicken Empanadas:
Ingredients:
- 2 cups cooked and shredded chicken
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup frozen peas and carrots
- 1/2 cup tomato sauce
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 sheets of refrigerated pie crust
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté the onion and bell pepper until softened.
- Add the shredded chicken, frozen peas and carrots, tomato sauce, cumin, paprika, salt, and pepper to the skillet. Cook for a few minutes until heated through.
- Roll out the pie crust and use a round cookie cutter to cut out circles.
- Place a spoonful of the chicken mixture onto each circle of dough.
- Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet lined with parchment paper.
- Brush the tops of the empanadas with the beaten egg wash.
- Bake for 20-25 minutes or until the empanadas are golden brown.
- Allow to cool slightly before serving.
