Chicken Empanadas

Here’s a kid-friendly recipe for Chicken Empanadas:

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup frozen peas and carrots
  • 1/2 cup tomato sauce
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 sheets of refrigerated pie crust
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the onion and bell pepper until softened.
  3. Add the shredded chicken, frozen peas and carrots, tomato sauce, cumin, paprika, salt, and pepper to the skillet. Cook for a few minutes until heated through.
  4. Roll out the pie crust and use a round cookie cutter to cut out circles.
  5. Place a spoonful of the chicken mixture onto each circle of dough.
  6. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
  7. Place the empanadas on a baking sheet lined with parchment paper.
  8. Brush the tops of the empanadas with the beaten egg wash.
  9. Bake for 20-25 minutes or until the empanadas are golden brown.
  10. Allow to cool slightly before serving.
