Chicken Quesadillas

Here’s a kid-friendly recipe for chicken quesadillas:

Ingredients:

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red onion
  • 4 (8-inch) flour tortillas
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix the shredded chicken, cheddar cheese, diced tomatoes, green bell pepper, and red onion. Season with salt and pepper to taste.
  2. Place a tortilla on a flat surface and spread a quarter of the chicken mixture over half of the tortilla. Fold the other half over to cover the filling.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Place the quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas and chicken mixture.
  4. Once cooked, remove the quesadillas from the skillet and let them cool for a few minutes before slicing into wedges.
  5. Serve the chicken quesadillas with a side of sour cream, guacamole, or salsa for dipping.
