Chicken Quesadillas
Here’s a kid-friendly recipe for chicken quesadillas:
Ingredients:
- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced green bell pepper
- 1/4 cup diced red onion
- 4 (8-inch) flour tortillas
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
- In a bowl, mix the shredded chicken, cheddar cheese, diced tomatoes, green bell pepper, and red onion. Season with salt and pepper to taste.
- Place a tortilla on a flat surface and spread a quarter of the chicken mixture over half of the tortilla. Fold the other half over to cover the filling.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Place the quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas and chicken mixture.
- Once cooked, remove the quesadillas from the skillet and let them cool for a few minutes before slicing into wedges.
- Serve the chicken quesadillas with a side of sour cream, guacamole, or salsa for dipping.
