Kid-Friendly Chicken Satay Skewers
Ingredients:
- For the Chicken Skewers:
- 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce (low-sodium if preferred)
- 1 tablespoon honey
- 1 tablespoon peanut butter (or sunflower seed butter for nut-free)
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder (optional)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)
- For the Peanut Dipping Sauce:
- 3 tablespoons peanut butter (or sunflower seed butter)
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice (or lemon juice)
- Water to thin, if needed
Instructions:
- Marinate the Chicken:
- In a bowl, combine soy sauce, honey, peanut butter, garlic powder, ginger powder (if using), vegetable oil, salt, and pepper. Mix well.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- Prepare the Skewers:
- Preheat your grill or grill pan over medium heat.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Cook the Skewers:
- Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Make sure to turn them occasionally for even cooking.
- Make the Dipping Sauce:
- In a small bowl, mix together peanut butter, soy sauce, honey, lime juice, and a little water to reach your desired consistency. Adjust the flavors to your taste.
- Serve:
- Serve the chicken satay skewers warm with the peanut dipping sauce on the side. You can also add some fresh veggies or rice for a complete meal.
Tips:
- Feel free to add some veggies (like bell peppers or zucchini) to the skewers for extra color and nutrition.
- If your kids are sensitive to spice, make sure to keep the marinade mild and adjust the dipping sauce accordingly.
Enjoy your delicious and fun Chicken Satay Skewers!
