Kid-Friendly Chicken Satay Skewers

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce (low-sodium if preferred)
  • 1 tablespoon honey
  • 1 tablespoon peanut butter (or sunflower seed butter for nut-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder (optional)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)
  • For the Peanut Dipping Sauce:
  • 3 tablespoons peanut butter (or sunflower seed butter)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice (or lemon juice)
  • Water to thin, if needed

Instructions:

  1. Marinate the Chicken:
  • In a bowl, combine soy sauce, honey, peanut butter, garlic powder, ginger powder (if using), vegetable oil, salt, and pepper. Mix well.
  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  1. Prepare the Skewers:
  • Preheat your grill or grill pan over medium heat.
  • Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  1. Cook the Skewers:
  • Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Make sure to turn them occasionally for even cooking.
