Corn Fried Rice

Here’s a kid-friendly recipe for corn fried rice:

Ingredients:

  • 2 cups cooked rice
  • 1 cup frozen corn, thawed
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers (red, green, or yellow)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced carrots and cook for 2-3 minutes until they start to soften.
  3. Add the diced bell peppers and cook for another 2-3 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  5. Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
  6. Stir in the thawed corn and cook for another 2-3 minutes.
  7. Drizzle the soy sauce over the rice and vegetables, and sprinkle with garlic powder, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
  8. Remove from heat and garnish with chopped green onions if desired.
  9. Serve the corn fried rice as a delicious and kid-friendly meal!
