Corn Fried Rice
Here’s a kid-friendly recipe for corn fried rice:
Ingredients:
- 2 cups cooked rice
- 1 cup frozen corn, thawed
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers (red, green, or yellow)
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced carrots and cook for 2-3 minutes until they start to soften.
- Add the diced bell peppers and cook for another 2-3 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
- Stir in the thawed corn and cook for another 2-3 minutes.
- Drizzle the soy sauce over the rice and vegetables, and sprinkle with garlic powder, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped green onions if desired.
- Serve the corn fried rice as a delicious and kid-friendly meal!
