Cornflake-crusted Baked Cod

Here’s a kid-friendly recipe for cornflake-crusted baked cod:

Ingredients:

  • 4 cod fillets
  • 2 cups cornflakes, crushed
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, mix together the crushed cornflakes, garlic powder, paprika, salt, and pepper.
  3. Place the flour in another shallow dish, and the beaten eggs in a third shallow dish.
  4. Dredge each cod fillet in the flour, then dip it into the beaten eggs, and finally coat it with the cornflake mixture, pressing gently to adhere.
  5. Place the coated cod fillets on the prepared baking sheet.
  6. Lightly spray the tops of the cod fillets with cooking spray to help them brown in the oven.
  7. Bake for 15-20 minutes, or until the cod is cooked through and the coating is crispy and golden brown.

Serve the cornflake-crusted baked cod with a side of vegetables or a salad for a delicious and kid-friendly meal!
