Crockpot Chicken Tacos

Here’s a kid-friendly recipe for Crockpot Chicken Tacos:

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 packet of taco seasoning
  • 1 cup chicken broth
  • 1 cup mild salsa
  • 8 small flour or corn tortillas
  • Optional toppings: shredded cheese, lettuce, diced tomatoes, sour cream

Instructions:

  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Pour the chicken broth and salsa over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  5. Shred the chicken using two forks and mix it with the cooking liquid in the crockpot.
  6. Warm the tortillas according to package instructions.
  7. Assemble the tacos by placing the shredded chicken in the warm tortillas and adding your favorite toppings.
