Dadar Gulung

Dadar Gulung is a delicious Indonesian dessert that’s fun to make and eat. It’s a rolled pancake filled with sweet coconut filling. Here’s a kid-friendly recipe for you:

Ingredients:

For the Pancake:

  • 1 cup all-purpose flour
  • 1 cup coconut milk (or regular milk)
  • 1 tablespoon sugar
  • A pinch of salt
  • A few drops of green food coloring (optional)
  • 1 tablespoon pandan juice (optional, for flavor and color)

For the Coconut Filling:

  • 1 cup grated fresh coconut (or sweetened shredded coconut)
  • 1/4 cup sugar
  • A pinch of salt
  • 1/4 cup water

Instructions:

1. Make the Coconut Filling:

  • In a saucepan, combine the grated coconut, sugar, salt, and water.
  • Cook over medium heat, stirring constantly until the mixture thickens and the sugar dissolves. This should take about 5-7 minutes.
  • Once done, remove from heat and let it cool.

2. Prepare the Pancake Batter:

  • In a mixing bowl, combine the flour, coconut milk, sugar, and salt. Mix well until smooth.
  • If using, add a few drops of green food coloring and pandan juice to give it a nice color and flavor. Mix until well combined.

3. Cook the Pancakes:

  • Heat a non-stick skillet over medium heat. You can lightly grease it with a little oil if needed.
  • Pour a ladleful of the pancake batter into the skillet, swirling it around to form a thin, even layer.
  • Cook for about 1-2 minutes until the edges lift and the surface is set. Flip and cook for another minute on the other side.
  • Remove from the skillet and repeat with the remaining batter, stacking the pancakes on a plate.

4. Assemble the Dadar Gulung:

  • Take one pancake and place a spoonful of the coconut filling in the center.
  • Roll the pancake tightly around the filling, starting from one end.
  • Repeat with the remaining pancakes and filling.

5. Serve:

  • Cut the rolled pancakes into bite-sized pieces if desired.
