Easy Baked Rice

Here’s a simple and kid-friendly Asian recipe for easy baked rice:

Ingredients:

  • 2 cups of uncooked white rice
  • 4 cups of chicken or vegetable broth
  • 1 cup of mixed vegetables (peas, carrots, corn, etc.)
  • 1 cup of diced chicken or tofu (optional)
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • Salt and pepper to taste
  • Sliced green onions for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the uncooked rice, broth, mixed vegetables, and diced chicken or tofu (if using).
  3. Stir in the soy sauce and sesame oil, and season with salt and pepper.
  4. Cover the baking dish with foil and bake in the preheated oven for 45-50 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove from the oven and let it sit for a few minutes.
  6. Fluff the rice with a fork and garnish with sliced green onions before serving.
