Garlic Herb Chicken

Here’s a kid-friendly recipe for Garlic Herb Chicken that’s simple and delicious. It’s perfect for little helpers in the kitchen!

Garlic Herb Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (you can adjust based on your kids’ taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prep the Chicken:
  • Place the chicken breasts between two pieces of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to an even thickness (this helps them cook evenly).
  1. Make the Marinade:
  • In a small bowl, mix together the olive oil, minced garlic, oregano, thyme, basil, salt, and pepper.
  1. Marinate the Chicken:
  • Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring it’s well coated. Let it marinate for at least 15-30 minutes. If you have more time, you can refrigerate it for up to 2 hours for more flavor.
  1. Cook the Chicken:
  • Heat a skillet over medium heat. Add a little olive oil if needed to prevent sticking.
  • Once the skillet is hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (the internal temperature should reach 165°F or 75°C).
  1. Serve:
  • Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Squeeze a bit of fresh lemon juice over the top for extra flavor, if desired.
  • Slice the chicken and arrange it on a plate. Garnish with fresh parsley if you like.
  1. Enjoy:
  • Serve the Garlic Herb Chicken with your favorite sides, such as rice, mashed potatoes, or steamed vegetables.

Tips:

  • Let your kids help with mixing the marinade and coating the chicken.
  • You can add some veggies to the skillet while cooking the chicken for a complete meal.
  • This recipe can also be made on the grill for a fun outdoor cooking experience!

Enjoy your cooking time with the kids!
