Here’s a kid-friendly recipe for Ginger Pork Meatball Stir Fry:

Ingredients:

  • 1 pound ground pork
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • Cooked rice, for serving

Instructions:

  1. In a large bowl, mix together the ground pork, grated ginger, minced garlic, soy sauce, honey, and cornstarch until well combined.
  2. Roll the pork mixture into small meatballs, about 1 inch in diameter.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes.
  4. Remove the meatballs from the skillet and set aside. In the same skillet, add the sliced bell pepper and broccoli florets. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5 minutes.
  5. Return the meatballs to the skillet and toss with the vegetables to combine.
  6. Serve the ginger pork meatball stir fry over cooked rice.
