Here’s a kid-friendly recipe for Indo Chinese Sweet Corn Soup:

Ingredients:

  • 2 cups sweet corn kernels
  • 4 cups chicken or vegetable broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1 egg, beaten
  • 2 green onions, finely chopped
  • Salt to taste
  • 1 tablespoon cooking oil

Instructions:

  1. In a blender, blend 1 cup of sweet corn kernels with 1 cup of broth until smooth. Set aside.
  2. In a small bowl, mix the cornstarch with water to make a slurry.
  3. Heat the oil in a pot over medium heat. Add the remaining sweet corn kernels and sauté for 2-3 minutes.
  4. Pour in the remaining broth and bring to a simmer.
  5. Stir in the blended sweet corn mixture, soy sauce, sugar, and white pepper. Let it simmer for 5-7 minutes.
  6. Slowly pour the beaten egg into the soup while stirring gently to create silky egg ribbons.
  7. Stir in the cornstarch slurry to thicken the soup.
  8. Season with salt to taste and garnish with chopped green onions.
  9. Serve the sweet corn soup hot and enjoy!
