Instant Pot Pineapple Chicken

Here’s a kid-friendly recipe for Instant Pot Pineapple Chicken:

Ingredients:

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks
  • 1/2 cup pineapple juice
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • Optional: sliced bell peppers and onions for added veggies

Instructions:

  1. In the Instant Pot, combine the pineapple chunks, pineapple juice, ketchup, soy sauce, honey, garlic, and ginger.
  2. Season the chicken pieces with salt and pepper, then add them to the Instant Pot, ensuring they are coated with the sauce.
  3. Close the lid and set the Instant Pot to Manual, High Pressure for 5 minutes.
  4. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
  5. In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the Instant Pot to thicken the sauce.
  6. Optional: Add sliced bell peppers and onions to the Instant Pot for added veggies. Set the Instant Pot to Saute mode and cook for a few minutes until the veggies are tender.
  7. Serve the pineapple chicken over rice or with your child’s favorite side dish.
