Ingredients:
- 1.5 lbs chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks
- 1/2 cup pineapple juice
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- Optional: sliced bell peppers and onions for added veggies
Instructions:
- In the Instant Pot, combine the pineapple chunks, pineapple juice, ketchup, soy sauce, honey, garlic, and ginger.
- Season the chicken pieces with salt and pepper, then add them to the Instant Pot, ensuring they are coated with the sauce.
- Close the lid and set the Instant Pot to Manual, High Pressure for 5 minutes.
