Kung Pao Chicken
Here’s a kid-friendly recipe for Kung Pao Chicken:
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into small cubes
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1/2 cup unsalted peanuts
- 2 cloves garlic, minced
- 1/2 teaspoon grated ginger
- 1/2 cup diced bell peppers (red or green)
- 2 green onions, chopped
- Cooked white rice, for serving
For the sauce:
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/2 teaspoon cornstarch
Instructions:
- In a bowl, mix the cubed chicken with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Set aside to marinate for 10-15 minutes.
- In a small bowl, whisk together the sauce ingredients: 3 tablespoons soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of oil. Add the minced garlic, grated ginger, and diced bell peppers. Cook for 2-3 minutes until the peppers are slightly softened.
- Add the cooked chicken back to the skillet, along with the sauce and unsalted peanuts. Stir to coat the chicken and peppers with the sauce. Cook for an additional 2-3 minutes until the sauce thickens.
- Stir in the chopped green onions.
- Serve the Kung Pao Chicken over cooked white rice.
