Kung Pao Chicken

Here’s a kid-friendly recipe for Kung Pao Chicken:

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 cup unsalted peanuts
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated ginger
  • 1/2 cup diced bell peppers (red or green)
  • 2 green onions, chopped
  • Cooked white rice, for serving

For the sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon cornstarch

Instructions:

  1. In a bowl, mix the cubed chicken with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Set aside to marinate for 10-15 minutes.
  2. In a small bowl, whisk together the sauce ingredients: 3 tablespoons soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, and cornstarch. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add another tablespoon of oil. Add the minced garlic, grated ginger, and diced bell peppers. Cook for 2-3 minutes until the peppers are slightly softened.
  5. Add the cooked chicken back to the skillet, along with the sauce and unsalted peanuts. Stir to coat the chicken and peppers with the sauce. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Stir in the chopped green onions.
  7. Serve the Kung Pao Chicken over cooked white rice.
