Lazy Shepherd’s Pie

Here’s a kid-friendly recipe for Lazy Shepherd’s Pie:

Ingredients:

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 4 cups mashed potatoes (you can use instant mashed potatoes for convenience)
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Add the chopped onion and garlic, and cook until the onion is softened.
  3. Stir in the frozen mixed vegetables and cook for a few minutes until heated through.
  4. Stir in the condensed cream of mushroom soup and season with salt and pepper to taste. Cook for a few more minutes until the mixture is heated through.
  5. Transfer the meat and vegetable mixture to a 9×13 inch baking dish and spread it out evenly.
  6. Spread the mashed potatoes over the meat mixture, covering it completely.
  7. Sprinkle the shredded cheddar cheese over the mashed potatoes.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Let it cool for a few minutes, then sprinkle with chopped fresh parsley before serving.
