Lazy Shepherd’s Pie
Here’s a kid-friendly recipe for Lazy Shepherd’s Pie:
Ingredients:
- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup shredded cheddar cheese
- 4 cups mashed potatoes (you can use instant mashed potatoes for convenience)
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Add the chopped onion and garlic, and cook until the onion is softened.
- Stir in the frozen mixed vegetables and cook for a few minutes until heated through.
- Stir in the condensed cream of mushroom soup and season with salt and pepper to taste. Cook for a few more minutes until the mixture is heated through.
- Transfer the meat and vegetable mixture to a 9×13 inch baking dish and spread it out evenly.
- Spread the mashed potatoes over the meat mixture, covering it completely.
- Sprinkle the shredded cheddar cheese over the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes, then sprinkle with chopped fresh parsley before serving.
