Lemon Chicken Cutlet Rice

Here’s a simple and kid-friendly recipe for lemon chicken cutlet rice:

Ingredients:

  • 4 chicken cutlets
  • 1 cup of white rice
  • 2 cups of chicken broth
  • 2 tablespoons of olive oil
  • 1/4 cup of lemon juice
  • 1 teaspoon of lemon zest
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of garlic powder
  • 1/4 cup of all-purpose flour
  • 1/4 cup of breadcrumbs
  • 1 egg, beaten
  • Lemon slices for garnish (optional)

Instructions:

  1. Cook the white rice according to the package instructions, using the chicken broth instead of water for added flavor.
  2. In a shallow dish, mix together the flour, garlic powder, salt, and pepper. In another dish, place the beaten egg, and in a third dish, place the breadcrumbs.
  3. Dredge each chicken cutlet in the flour mixture, then dip it into the egg, and finally coat it with breadcrumbs.
  4. Heat the olive oil in a large skillet over medium heat. Cook the breaded chicken cutlets for 4-5 minutes on each side, or until they are golden brown and cooked through.
  5. In a small bowl, mix together the lemon juice and lemon zest. Pour this mixture over the cooked chicken cutlets and let it simmer for a few minutes to absorb the flavors.
  6. Serve the lemon chicken cutlets over the cooked white rice. Garnish with lemon slices if desired.
