Lentil Tacos
Here’s a kid-friendly recipe for lentil tacos that is easy to make and delicious!
Ingredients:
- 1 cup dried lentils (green or brown)
- 3 cups vegetable broth or water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 small taco shells or tortillas
- Toppings (choose your favorites):
- Shredded lettuce
- Diced tomatoes
- Shredded cheese
- Sour cream or yogurt
- Avocado slices
- Salsa
Instructions:
- Cook the Lentils:
- Rinse the lentils under cold water. In a medium pot, combine lentils and vegetable broth (or water). Bring to a boil, then reduce heat to low and cover. Simmer for about 20-25 minutes, or until the lentils are tender. Drain any excess liquid.
- Sauté the Vegetables:
- In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is soft and translucent, about 5 minutes.
- Season the Lentils:
- Add the cooked lentils to the skillet with the onions and garlic. Stir in cumin, chili powder, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to combine. If it seems dry, you can add a splash of water or broth.
- Assemble the Tacos:
- Warm the taco shells or tortillas in the oven or microwave. Spoon the lentil mixture into each taco shell.
- Add Toppings:
- Let the kids customize their tacos with their favorite toppings like lettuce, tomatoes, cheese, sour cream, avocado, or salsa.
