Loaded Baked Potato Dip

Here’s a fun and easy recipe for Loaded Baked Potato Dip that kids will love to help make and eat!

Ingredients:

  • 2 large baking potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon (you can use turkey bacon for a lighter option)
  • 1/4 cup chopped green onions (or chives)
  • Salt and pepper to taste
  • Optional: extra cheese and bacon for topping

Instructions:

  1. Bake the Potatoes:
  • Preheat the oven to 400°F (200°C).
  • Wash the baking potatoes and poke a few holes in them with a fork.
  • Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when poked with a fork.
  • Let them cool for a few minutes before handling.
  1. Prepare the Dip Base:
  • Once the potatoes are cool enough to handle, cut them in half and scoop out the insides into a large mixing bowl. Leave a little potato in the skins to keep them sturdy if you want to use them for serving later!
  • Mash the potato with a fork until it’s nice and creamy.
  1. Mix in the Goodies:
  • Add the sour cream, shredded cheddar cheese, crumbled bacon, and chopped green onions to the mashed potatoes.
  • Season with salt and pepper to taste.
  • Mix everything together until well combined.
  1. Optional Topping:
  • If you want, you can sprinkle some extra cheese and bacon on top of the dip for a fun presentation!
  1. Serve:
  • You can serve the dip in the potato skins or in a bowl with crackers, tortilla chips, or fresh veggies for dipping.
  • Enjoy your Loaded Baked Potato Dip!

Tips:

  • Let the kids help with mixing and scooping out the potatoes!
  • You can add other toppings like diced tomatoes, olives, or a drizzle of ranch dressing to make it even more fun.
