Minced Pork Fried Rice

Here’s a kid-friendly recipe for minced pork fried rice:

Ingredients:

  • 1 lb minced pork
  • 3 cups cooked rice (preferably leftover and cooled)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions:

  1. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook for 1 minute.
  2. Add the minced pork to the skillet and cook until browned and cooked through. Season with salt and pepper to taste.
  3. Push the pork to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix them with the pork.
  4. Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are heated through.
  5. Add the cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-4 minutes.
  6. In a small bowl, mix together the soy sauce and oyster sauce. Pour the sauce over the fried rice and stir to combine.
  7. Continue to stir-fry the fried rice for another 2-3 minutes, ensuring everything is well mixed and heated through.
  8. Taste and adjust seasoning if necessary. If desired, garnish with chopped green onions before serving.
