Minced Pork Fried Rice
Here’s a kid-friendly recipe for minced pork fried rice:
Ingredients:
- 1 lb minced pork
- 3 cups cooked rice (preferably leftover and cooled)
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions:
- Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook for 1 minute.
- Add the minced pork to the skillet and cook until browned and cooked through. Season with salt and pepper to taste.
- Push the pork to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix them with the pork.
- Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are heated through.
- Add the cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-4 minutes.
- In a small bowl, mix together the soy sauce and oyster sauce. Pour the sauce over the fried rice and stir to combine.
- Continue to stir-fry the fried rice for another 2-3 minutes, ensuring everything is well mixed and heated through.
- Taste and adjust seasoning if necessary. If desired, garnish with chopped green onions before serving.
