Pancit Bihon Guisado

Here’s a kid-friendly version of Pancit Bihon Guisado:

Ingredients:
– 1 pack (8 oz) of rice sticks (bihon)
– 2 tablespoons of cooking oil
– 1/2 lb boneless, skinless chicken breast, sliced into small pieces
– 1/2 lb shrimp, peeled and deveined
– 1 small carrot, julienned
– 1/2 cup green beans, sliced
– 1/2 cup cabbage, shredded
– 1/2 cup chicken broth
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 3 cloves garlic, minced
– 1 small onion, chopped
– Salt and pepper to taste
– Calamansi or lemon wedges for serving

Instructions:
1. Soak the rice sticks (bihon) in water for about 10 minutes or until soft. Drain and set aside.
2. In a large pan, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.
3. Add the chicken and cook until no longer pink. Then, add the shrimp and cook until they turn pink.
4. Stir in the carrots, green beans, and cabbage. Cook for a few minutes until the vegetables are slightly tender.
5. Pour in the chicken broth, soy sauce, and oyster sauce. Season with salt and pepper according to taste.
6. Add the soaked rice sticks (bihon) and stir until well combined and the noodles have absorbed the liquid.
7. Cook for a few more minutes until the noodles are fully cooked and the liquid has been absorbed.
8. Serve the Pancit Bihon Guisado with calamansi or lemon wedges on the side.
