Pineapple and Ham Fried Rice

Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1 cup diced pineapple
- 1 cup diced ham
- 1/2 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced ham to the skillet and cook for 2-3 minutes until it starts to brown.
- Push the ham to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until just set, then mix them with the ham.
- Add the cooked rice, diced pineapple, and frozen peas and carrots to the skillet. Stir to combine with the ham and eggs.
- Pour the soy sauce over the rice mixture and stir well to evenly distribute the soy sauce.
- Continue to cook and stir for another 3-4 minutes until everything is heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
