Pineapple and Ham Fried Rice

Here’s a kid-friendly recipe for Pineapple and Ham Fried Rice:

Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 1 cup diced pineapple
  • 1 cup diced ham
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced ham to the skillet and cook for 2-3 minutes until it starts to brown.
  3. Push the ham to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until just set, then mix them with the ham.
  4. Add the cooked rice, diced pineapple, and frozen peas and carrots to the skillet. Stir to combine with the ham and eggs.
  5. Pour the soy sauce over the rice mixture and stir well to evenly distribute the soy sauce.
  6. Continue to cook and stir for another 3-4 minutes until everything is heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.
