Quick Breakfast Burrito

Here’s a kids-friendly recipe for a quick breakfast burrito:

Ingredients:

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 4 small flour tortillas
  • 1/2 cup cooked and crumbled breakfast sausage or diced ham
  • Salt and pepper to taste
  • Optional toppings: salsa, diced tomatoes, avocado, sour cream

Instructions:

  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat a non-stick skillet over medium heat and spray with cooking spray.
  3. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through.
  4. Warm the flour tortillas in a separate skillet or in the microwave for a few seconds to make them pliable.
  5. Divide the scrambled eggs, shredded cheese, and cooked sausage or ham among the tortillas.
  6. Add any optional toppings if desired.
  7. Roll up the tortillas, tucking in the ends to enclose the filling.
  8. Serve the breakfast burritos immediately and enjoy!
