Seafood Fried Rice

Here’s a simple and kid-friendly recipe for seafood fried rice that’s delicious and easy to make.

Ingredients:
– 2 cups cooked rice (preferably day-old rice)
– 1 cup mixed seafood (like shrimp, squid, and fish, pre-cooked or boiled)
– 1 cup frozen peas and carrots (or any other vegetables your kids like)
– 2 eggs
– 2 tablespoons soy sauce (low-sodium if preferred)
– 1 tablespoon vegetable oil
– 1 teaspoon sesame oil (optional)
– 2 green onions, chopped (optional)
– Salt and pepper to taste

Instructions:

1. Prepare the Rice: If you don’t have day-old rice, cook the rice according to package instructions and let it cool. Using leftover rice helps to keep the grains separate and avoids mushiness.

2. Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Remove the scrambled eggs from the pan and set them aside.

3. Sauté the Vegetables: In the same skillet, add the mixed seafood and cook for about 2-3 minutes until heated through. Then, add the frozen peas and carrots and stir-fry for another 2 minutes until the vegetables are warmed up.

4. Add the Rice: Add the cooked rice to the skillet. Stir everything together and break up any clumps.

5. Season the Rice: Pour the soy sauce (and sesame oil, if using) over the rice. Stir well to combine and ensure the rice is evenly coated.

6. Mix in the Eggs: Add the scrambled eggs back into the skillet and mix until everything is well combined.

7. Add Green Onions: If using, sprinkle in the chopped green onions and stir for another minute.

8. Taste and Adjust: Finally, taste the fried rice and add salt and pepper if needed.

9. Serve: Serve warm and enjoy your delicious seafood fried rice!

Tips:
– Feel free to adjust the seafood to your kids’ preferences. You can use just shrimp or even crab sticks for a milder taste.
– You can also add some cooked chicken or tofu for more protein.
– If your kids like it spicy, consider adding a little bit of chopped bell pepper or a dash of hot sauce for an extra kick!
