Ingredients:
– 2 cups cooked and shredded chicken
– 1 tablespoon olive oil
– 1 small onion, finely diced
– 2 carrots, diced
– 2 stalks of celery, diced
– 2 cloves of garlic, minced
– 1/4 cup all-purpose flour
– 2 cups chicken broth
– 1 cup milk
– 1 cup frozen peas
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 1 package refrigerated pie crusts

Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a large skillet, heat olive oil over medium heat. Add the onion, carrots, celery, and garlic, and cook until vegetables are tender, about 5-7 minutes.
3. Sprinkle flour over the vegetables and stir to combine. Cook for another minute.
4. Slowly pour in the chicken broth and milk, stirring constantly until the mixture thickens.
5. Add the shredded chicken, frozen peas, thyme, salt, and pepper. Stir to combine.
6. Roll out one of the pie crusts and place it over the skillet, trimming any excess crust.
7. Cut a few slits in the crust to allow steam to escape.
8. Bake in the preheated oven for about 30 minutes, or until the crust is golden brown and the filling is bubbly.
