Stewed Pork Ribs with Chestnuts

Ingredients:

  • 1.5 lbs pork ribs, cut into individual pieces
  • 1 cup chestnuts, peeled and boiled
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 cups chicken broth
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp ginger, grated
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Chopped green onions for garnish

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the pork ribs to the pot and brown them on all sides.
  3. Pour in the chicken broth, soy sauce, honey, and grated ginger. Stir to combine.
  4. Add the diced carrots and potatoes to the pot. Season with salt and pepper.
  5. Cover the pot and simmer the stew for about 1.5 hours, or until the pork is tender.
  6. Add the boiled chestnuts to the stew and cook for an additional 15 minutes.
  7. Taste and adjust the seasoning if needed.
  8. Serve the stewed pork ribs with chestnuts in bowls, garnished with chopped green onions.
