Stewed Pork Ribs with Chestnuts
Ingredients:
- 1.5 lbs pork ribs, cut into individual pieces
- 1 cup chestnuts, peeled and boiled
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 2 cups chicken broth
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tsp ginger, grated
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Chopped green onions for garnish
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the pork ribs to the pot and brown them on all sides.
- Pour in the chicken broth, soy sauce, honey, and grated ginger. Stir to combine.
- Add the diced carrots and potatoes to the pot. Season with salt and pepper.
- Cover the pot and simmer the stew for about 1.5 hours, or until the pork is tender.
- Add the boiled chestnuts to the stew and cook for an additional 15 minutes.
- Taste and adjust the seasoning if needed.
- Serve the stewed pork ribs with chestnuts in bowls, garnished with chopped green onions.
