Stir Fried Eggs Noodles

Here’s a simple and kid-friendly recipe for stir-fried egg noodles:

Ingredients:

  • 8 oz egg noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (such as bell peppers, carrots, and snap peas)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly tender.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Let the eggs cook for a minute or two until they start to set, then scramble them with a spatula.
  5. Add the cooked egg noodles to the pan, along with the soy sauce, oyster sauce (if using), and sugar. Toss everything together until well combined and heated through.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions if desired.
  8. Serve the stir-fried egg noodles hot and enjoy!
