Stir Fried Eggs Noodles
Here’s a simple and kid-friendly recipe for stir-fried egg noodles:
Ingredients:
- 8 oz egg noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as bell peppers, carrots, and snap peas)
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sugar
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions:
- Cook the egg noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly tender.
- Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Let the eggs cook for a minute or two until they start to set, then scramble them with a spatula.
