Sweet and Sour Chicken
Here’s a kids-friendly recipe for sweet and sour chicken:
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 cup pineapple chunks, drained
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 cup sweet and sour sauce
- Cooked white rice for serving
Instructions:
- Preheat the oven to 350°F (175°C).
- Place the cornstarch in a shallow dish. Dip the chicken pieces into the beaten eggs, then coat them in the cornstarch.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook until they are golden brown and cooked through. Remove the chicken from the skillet and place on a paper towel-lined plate to drain any excess oil.
