Sweet and Sour Chicken

Here’s a kids-friendly recipe for sweet and sour chicken:

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 cup pineapple chunks, drained
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 cup sweet and sour sauce
  • Cooked white rice for serving

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Place the cornstarch in a shallow dish. Dip the chicken pieces into the beaten eggs, then coat them in the cornstarch.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook until they are golden brown and cooked through. Remove the chicken from the skillet and place on a paper towel-lined plate to drain any excess oil.
  4. In a large bowl, combine the cooked chicken, pineapple chunks, and bell peppers. Pour the sweet and sour sauce over the mixture and stir to coat everything evenly.
  5. Transfer the mixture to a baking dish and bake in the preheated oven for 15-20 minutes, until the sauce is bubbly and the peppers are tender.
  6. Serve the sweet and sour chicken over cooked white rice.
