Taco Casserole
Here’s a kid-friendly recipe for taco casserole:
Ingredients:
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 bag tortilla chips
- Optional toppings: chopped tomatoes, sliced olives, sour cream, guacamole
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning to the cooked beef according to the package instructions.
- Stir in the black beans, corn, and salsa, and cook for a few more minutes until heated through.
- Crush the tortilla chips and spread half of them in the bottom of a 9×13 inch baking dish.
- Spoon the beef mixture over the chips, then sprinkle with half of the shredded cheese.
- Add another layer of crushed tortilla chips, then top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve with optional toppings as desired.
