Taco Casserole

Here’s a kid-friendly recipe for taco casserole:

Ingredients:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 bag tortilla chips
  • Optional toppings: chopped tomatoes, sliced olives, sour cream, guacamole

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning to the cooked beef according to the package instructions.
  4. Stir in the black beans, corn, and salsa, and cook for a few more minutes until heated through.
  5. Crush the tortilla chips and spread half of them in the bottom of a 9×13 inch baking dish.
  6. Spoon the beef mixture over the chips, then sprinkle with half of the shredded cheese.
  7. Add another layer of crushed tortilla chips, then top with the remaining cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Serve with optional toppings as desired.
