Thai Mango Sticky Rice
Here’s a kid-friendly recipe for Thai mango sticky rice:
Ingredients:
- 1 cup of glutinous rice (also known as sweet rice)
- 1 1/2 cups of coconut milk
- 1/2 cup of sugar
- A pinch of salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds (optional) for garnish
Instructions:
- Rinse the glutinous rice in a strainer until the water runs clear. Then, soak the rice in water for at least 30 minutes.
- After soaking, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam the rice for about 25-30 minutes, or until it’s tender and cooked through.
- While the rice is steaming, combine the coconut milk, sugar, and a pinch of salt in a saucepan over medium heat. Stir the mixture until the sugar is dissolved and the coconut milk is heated through. Do not let it boil.
- Once the rice is cooked, transfer it to a large bowl and pour half of the coconut milk mixture over the rice. Stir gently to coat the rice with the coconut milk. Let it sit for about 10-15 minutes to allow the rice to absorb the coconut milk.
- To serve, spoon the sticky rice onto a plate or into individual bowls. Arrange the sliced mango on top or on the side of the rice. Drizzle the remaining coconut milk over the top of the rice and mango. You can also sprinkle some sesame seeds on top for a little extra crunch.
