Thai Sticky Mango Rice

Here’s a simplified and kid-friendly recipe for Thai Sticky Mango Rice:

Ingredients:

  • 1 cup sticky rice (also known as glutinous rice)
  • 1 cup coconut milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, sliced
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Rinse the sticky rice in a bowl or sieve until the water runs clear. Then, soak the rice in water for at least 4 hours or overnight.
  2. After soaking, drain the rice. Steam the sticky rice in a steamer for about 25-30 minutes, or until the rice is tender and translucent.
  3. While the rice is steaming, in a separate saucepan, combine the coconut milk, sugar, and salt. Heat the mixture over medium heat, stirring constantly until the sugar is dissolved and the mixture is heated through. Do not boil.
  4. Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut milk mixture over the rice. Stir to coat the rice evenly.
  5. Cover the bowl with a clean kitchen towel and let the rice sit for about 30 minutes to allow the flavors to meld.
  6. To serve, spoon the sticky rice onto individual plates or bowls. Arrange the sliced mango alongside the rice.
  7. Drizzle the remaining coconut milk mixture over the mango and rice. If desired, sprinkle with sesame seeds for a little extra crunch.

This simplified recipe omits some of the traditional steps to make it more kid-friendly, but it still captures the delicious essence of Thai Sticky Mango Rice. Enjoy!
