Veggie Quesadillas

Thinking of what to cook for your children? Fret not! Here’s a nutritious and kid-friendly lunch recipe for Veggie Quesadillas:

Ingredients:

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup mixed diced vegetables (bell peppers, onions, zucchini, mushrooms, etc.)
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • Optional toppings: sour cream, salsa, guacamole

Steps:

  1. Heat the olive oil in a pan over medium heat. Add the mixed diced vegetables and sautƩ for 5-7 minutes until they are tender. Sprinkle the taco seasoning over the vegetables and mix well. Remove from heat and set aside.
  2. Place a tortilla on a flat surface and sprinkle a quarter of the shredded cheddar cheese evenly over one half of the tortilla.
  3. Spoon a quarter of the sautƩed vegetables over the cheese.
  4. Fold the tortilla in half to cover the filling, creating a half-moon shape.
  5. Heat a non-stick pan over medium heat and place the filled tortilla in the pan. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  6. Repeat the process with the remaining tortillas, cheese, and vegetables.
  7. Once all the quesadillas are cooked, cut them into wedges and serve with optional toppings like sour cream, salsa, or guacamole.
