Veggie Quesadillas

Ingredients:
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup mixed diced vegetables (bell peppers, onions, zucchini, mushrooms, etc.)
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
- Optional toppings: sour cream, salsa, guacamole
Steps:
- Heat the olive oil in a pan over medium heat. Add the mixed diced vegetables and sautƩ for 5-7 minutes until they are tender. Sprinkle the taco seasoning over the vegetables and mix well. Remove from heat and set aside.
- Place a tortilla on a flat surface and sprinkle a quarter of the shredded cheddar cheese evenly over one half of the tortilla.
- Spoon a quarter of the sautƩed vegetables over the cheese.
- Fold the tortilla in half to cover the filling, creating a half-moon shape.
- Heat a non-stick pan over medium heat and place the filled tortilla in the pan. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the remaining tortillas, cheese, and vegetables.
- Once all the quesadillas are cooked, cut them into wedges and serve with optional toppings like sour cream, salsa, or guacamole.
