Here’s a kid-friendly recipe for Chicken Meatball Pad Thai:

Ingredients:
– 1 pound ground chicken
– 1 cup cooked rice noodles
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 red bell pepper, thinly sliced
– 1 cup shredded carrots
– 3 green onions, chopped
– 1/4 cup chopped peanuts
– 1/4 cup chopped fresh cilantro
– 2 tablespoons soy sauce
– 2 tablespoons honey
– 2 tablespoons lime juice
– 1 tablespoon peanut butter
– 1/4 teaspoon red pepper flakes (optional)
– Lime wedges for serving

Instructions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a bowl, mix ground chicken with salt and pepper. Form small meatballs and place them on the prepared baking sheet. Bake for 12-15 minutes, or until cooked through.
3. While the meatballs are baking, cook the rice noodles according to package instructions. Drain and set aside.
4. In a large skillet, heat the olive oil over medium heat. Add the garlic, bell pepper, and carrots. Cook for 3-4 minutes, or until the vegetables are tender.
5. In a small bowl, whisk together soy sauce, honey, lime juice, peanut butter, and red pepper flakes.
6. Add the cooked noodles and meatballs to the skillet with the vegetables. Pour the sauce over the mixture and toss to combine. Cook for 1-2 minutes, or until everything is heated through.
7. Serve the Chicken Meatball Pad Thai topped with green onions, chopped peanuts, and fresh cilantro. Serve with lime wedges on the side.
