Egg Sandwich

Here’s a nutritious and kid-friendly egg sandwich recipe:

Ingredients:

  • 4 eggs
  • 4 slices of whole wheat bread
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of diced bell peppers
  • 1/4 cup of diced tomatoes
  • 1/4 cup of diced spinach
  • Salt and pepper to taste
  • Butter or cooking spray for toasting the bread

Steps:

  1. In a bowl, beat the eggs and then mix in the diced bell peppers, tomatoes, and spinach. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook, stirring occasionally, until the eggs are scrambled and fully cooked.
  3. While the eggs are cooking, toast the whole wheat bread slices using a toaster or a skillet with butter or cooking spray.
  4. Once the eggs are cooked, divide the mixture into four portions and place each portion on a slice of toasted bread.
