Ingredients:

  • 200g dried rice vermicelli (bee hoon)
  • 1 carrot, julienned
  • 1/2 cup cabbage, shredded
  • 1/2 cup green beans, sliced
  • 2 eggs, beaten
  • 2 tablespoons cooking oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Spring onions for garnish (optional)

Instructions:

  1. Soak the dried rice vermicelli in warm water for about 15 minutes or until softened. Drain and set aside.
  2. Heat the cooking oil in a large pan or wok over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the julienned carrots, shredded cabbage, and sliced green beans to the pan. Stir-fry for a few minutes until the vegetables are slightly softened.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Allow the eggs to cook for a minute or so, then scramble them with a spatula and mix them with the vegetables.
  5. Add the softened rice vermicelli to the pan, along with the soy sauce, oyster sauce, sugar, salt, and pepper. Stir-fry everything together until well combined and the noodles are heated through.
  6. Taste and adjust the seasoning if needed. If the noodles are too dry, you can add a splash of water or more soy sauce.
  7. Once everything is well mixed and heated through, remove the pan from the heat.
  8. Garnish with chopped spring onions if desired, and serve the fried bee hoon warm.
