Fried Bee Hoon
Here’s a simple and kid-friendly recipe for fried bee hoon:
Ingredients:
- 200g dried rice vermicelli (bee hoon)
- 1 carrot, julienned
- 1/2 cup cabbage, shredded
- 1/2 cup green beans, sliced
- 2 eggs, beaten
- 2 tablespoons cooking oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- Salt and pepper to taste
- Spring onions for garnish (optional)
Instructions:
- Soak the dried rice vermicelli in warm water for about 15 minutes or until softened. Drain and set aside.
- Heat the cooking oil in a large pan or wok over medium heat. Add the minced garlic and sauté until fragrant.
- Add the julienned carrots, shredded cabbage, and sliced green beans to the pan. Stir-fry for a few minutes until the vegetables are slightly softened.
- Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Allow the eggs to cook for a minute or so, then scramble them with a spatula and mix them with the vegetables.
- Add the softened rice vermicelli to the pan, along with the soy sauce, oyster sauce, sugar, salt, and pepper. Stir-fry everything together until well combined and the noodles are heated through.
- Taste and adjust the seasoning if needed. If the noodles are too dry, you can add a splash of water or more soy sauce.
- Once everything is well mixed and heated through, remove the pan from the heat.
- Garnish with chopped spring onions if desired, and serve the fried bee hoon warm.
