Sheet Pan Chicken Fajitas

Here’s a kid-friendly recipe for Sheet Pan Chicken Fajitas:

Ingredients:

  • 1 pound boneless, skinless chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken strips, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Toss to coat everything evenly.
  3. Spread the chicken and vegetable mixture out on a large sheet pan in a single layer.
  4. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. While the chicken and vegetables are cooking, warm the flour tortillas in the oven or microwave.
  6. Serve the chicken and vegetable mixture in the warm tortillas, and let the kids add their favorite toppings like shredded cheese, sour cream, guacamole, and salsa.
