Stir Fried Egg Noodles
Here’s a simple and kid-friendly recipe for stir-fried egg noodles:
Ingredients:
- 8 oz egg noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as carrots, bell peppers, and snap peas)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 eggs, lightly beaten
- Salt and pepper to taste
- Optional: cooked and sliced chicken, shrimp, or tofu for added protein
Instructions:
- Cook the egg noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly tender.
- In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Pour the sauce over the vegetables in the pan and stir to combine.
- Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Allow the eggs to cook for a minute or two, then scramble them with a spatula until they are fully cooked.
- Add the cooked egg noodles to the pan and toss everything together until the noodles are well coated with the sauce and mixed with the vegetables and eggs.
- Season with salt and pepper to taste. If using, add the cooked protein (chicken, shrimp, or tofu) at this point and toss to combine.
- Serve the stir-fried egg noodles hot and enjoy!
