Stir Fried Egg Noodles

Here’s a simple and kid-friendly recipe for stir-fried egg noodles:

Ingredients:

  • 8 oz egg noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (such as carrots, bell peppers, and snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 2 eggs, lightly beaten
  • Salt and pepper to taste
  • Optional: cooked and sliced chicken, shrimp, or tofu for added protein

Instructions:

  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are slightly tender.
  4. In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Pour the sauce over the vegetables in the pan and stir to combine.
  5. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Allow the eggs to cook for a minute or two, then scramble them with a spatula until they are fully cooked.
  6. Add the cooked egg noodles to the pan and toss everything together until the noodles are well coated with the sauce and mixed with the vegetables and eggs.
  7. Season with salt and pepper to taste. If using, add the cooked protein (chicken, shrimp, or tofu) at this point and toss to combine.
  8. Serve the stir-fried egg noodles hot and enjoy!
