Asian Sweet and Sour Tofu

Here’s a nutritious and kid-friendly sweet and sour tofu recipe for your kids:

Ingredients:

  • 1 block of firm tofu, cut into cubes
  • 1 bell pepper, cut into chunks
  • 1 cup pineapple chunks
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked rice for serving

Steps:

  1. In a small bowl, mix together the ketchup, soy sauce, rice vinegar, brown sugar, cornstarch, and water. Set aside.
  2. In a large skillet or wok, heat some oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed, then add the bell pepper, pineapple, onion, and garlic. Stir-fry for a few minutes until the vegetables are slightly tender.
  4. Pour the sauce mixture over the vegetables in the skillet. Stir well and let it simmer for a few minutes until the sauce thickens.
  5. Add the cooked tofu back into the skillet and gently toss to coat everything in the sweet and sour sauce.
  6. Season with salt and pepper to taste.
  7. Serve the sweet and sour tofu over cooked rice.
