Ingredients:
- 4 eggs
- 4 hot dog buns or small baguettes
- 1 cup shredded cooked chicken or turkey
- 1 small onion, finely chopped
- 1 small carrot, grated
- 1/2 cup chopped spinach or other leafy greens
- 1/2 cup grated cheese (optional)
- 2 tablespoons tomato ketchup
- 1 tablespoon mayonnaise
- 1 teaspoon soy sauce
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Steps:
- In a bowl, beat the eggs and mix in the shredded chicken, chopped onion, grated carrot, chopped spinach, and grated cheese (if using).
