Here’s a nutritious and kid-friendly recipe for Roti John:

Ingredients:

  • 4 eggs
  • 4 hot dog buns or small baguettes
  • 1 cup shredded cooked chicken or turkey
  • 1 small onion, finely chopped
  • 1 small carrot, grated
  • 1/2 cup chopped spinach or other leafy greens
  • 1/2 cup grated cheese (optional)
  • 2 tablespoons tomato ketchup
  • 1 tablespoon mayonnaise
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Steps:

  1. In a bowl, beat the eggs and mix in the shredded chicken, chopped onion, grated carrot, chopped spinach, and grated cheese (if using).
  2. Add the tomato ketchup, mayonnaise, soy sauce, and black pepper to the egg mixture and stir until well combined.
  3. Cut the hot dog buns or baguettes in half lengthwise, but not all the way through, so they can open like a book.
  4. Spoon the egg mixture onto the bottom half of each bun, then close the buns.
  5. Heat the olive oil in a non-stick pan over medium heat.
  6. Place the filled buns in the pan and cook for 3-4 minutes on each side, or until the eggs are cooked and the buns are golden brown.
  7. Remove from the pan and let them cool slightly before cutting into smaller pieces for easy handling by kids.
