Chinese Spring Rolls

Here’s a kid-friendly recipe for Chinese spring rolls:

Ingredients:

  • 8 spring roll wrappers
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/2 cup cooked and shredded chicken or tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Oil for frying

Instructions:

  1. In a large bowl, mix together the shredded cabbage, carrots, bean sprouts, green onions, and chicken or tofu.
  2. In a small bowl, mix together the soy sauce, sesame oil, grated ginger, and minced garlic. Pour this mixture over the vegetable and chicken/tofu mixture and toss to combine.
  3. In a separate small bowl, mix together the cornstarch and water to create a slurry. This will be used to seal the spring roll wrappers.
  4. Lay a spring roll wrapper on a clean surface, with one corner pointing towards you. Place a small amount of the vegetable and chicken/tofu filling in the center of the wrapper.
  5. Fold the bottom corner over the filling, then fold in the side corners. Roll the wrapper upwards, sealing the top corner with the cornstarch slurry.
  6. Heat oil in a deep pan or wok over medium heat. Carefully add the spring rolls and fry until they are golden brown and crispy, about 3-4 minutes.
  7. Remove the spring rolls from the oil and place them on a plate lined with paper towels to drain any excess oil.
  8. Let the spring rolls cool for a few minutes before serving. They can be enjoyed on their own or with a dipping sauce such as sweet and sour sauce or soy sauce.
