Chinese Spring Rolls
Here’s a kid-friendly recipe for Chinese spring rolls:
Ingredients:
- 8 spring roll wrappers
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup bean sprouts
- 1/2 cup chopped green onions
- 1/2 cup cooked and shredded chicken or tofu
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch
- 1/4 cup water
- Oil for frying
Instructions:
- In a large bowl, mix together the shredded cabbage, carrots, bean sprouts, green onions, and chicken or tofu.
- In a small bowl, mix together the soy sauce, sesame oil, grated ginger, and minced garlic. Pour this mixture over the vegetable and chicken/tofu mixture and toss to combine.
- In a separate small bowl, mix together the cornstarch and water to create a slurry. This will be used to seal the spring roll wrappers.
- Lay a spring roll wrapper on a clean surface, with one corner pointing towards you. Place a small amount of the vegetable and chicken/tofu filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the side corners. Roll the wrapper upwards, sealing the top corner with the cornstarch slurry.
- Heat oil in a deep pan or wok over medium heat. Carefully add the spring rolls and fry until they are golden brown and crispy, about 3-4 minutes.
- Remove the spring rolls from the oil and place them on a plate lined with paper towels to drain any excess oil.
- Let the spring rolls cool for a few minutes before serving. They can be enjoyed on their own or with a dipping sauce such as sweet and sour sauce or soy sauce.
